Twice Baked Sweet Potatoes

4 medium sweet potatoes

2 tsp chopped chives

3 tbsp maple syrup

1 1/4 cup shredded cheddar cheese

salt & pepper

1 tbsp whole grain mustard

2 tbsp butter

Preheat oven to 400 degrees, bake halved sweet potatoes on a lined baking sheet for about 1 hour. Scoop out the flesh and put in a large mixing bowl, add chives, maple syrup, cheddar cheese, salt and pepper to taste, mustard, and butter. Mix well and add mixture back into sweet potato skins. Bake for an additional 15 minutes or until cheese is fully melted. Garnish with a drizzle of maple syrup, butter, and chopped chives.
